Hotel Erwin, the wonderfully weird and beautiful boutique hotel in Venice Beach, announces the opening of a neighborhood artisanal slice shop, Venice Way Pizza, for March. The Venice Way Pizza take-out window will specialize in L.A.-style pan pizza—5×5 inch “slabs” of crunchy, hearty but light, flavorful pizza with locally-sourced toppings, including traditional cheese, pepperoni and seasonal farmer’s market finds.
Cut from 15×15 inch custom-made pans, the pizza style blends a variety of pan pizza traditions including Detroit-Style Pizza with its uber-crunchy bottom crust, Roman Pizza al Taglio with its light and airy crumb and Sicilian Focaccia with simple but satisfying appeal. Venice Way Pizza is meant to delight the neighborhood’s demanding and eclectic palette without pretense.
Venice Way Pizza will be slinging piping hot slices seven days a week from lunch ‘til late. Topping options include Dogtown (pepperoni), Boardwalk (cheese), Muscle Beach (veggie) and a chef’s choice rotating special. Venice Way Pizza will also offer an open-air patio with seating for 28, along with full bar service, including a refreshed wine and beer list featuring a blend of selections from Italy and California. Pizza will be incorporated throughout the hotel’s menu offerings and into room service packages.
“We noticed a void of great slices in the neighborhood,” said General Manager Derek Haug. “When we found out that ‘pizza guy’ Noel Brohner lived just a few blocks away, we immediately collaborated to design a dough and crust to complement our neighborhood slice shop with a style that L.A. and Venice have been missing.”
The secret to the dough is “high hydration” which uses equal parts flour and water to make to make the signature house dough that is incomparably light and airy. A three-to-four-day extra-slow fermentation process ensures a flavorful dough reminiscent of sourdough with a deliciously sweet aroma.
The best chefs and restaurateurs in Los Angeles and beyond have enlisted Noel to launch and fine-tune their artisan pizza and bread programs including Chef Ori Menashe at Bestia, Chef Walter Manzke at Republique, Chef Evan Funke at Felix and Chef Chad Colby at Antico. Noel is also an APN (Associazione Pizzaioli Napoletani) USA Certified Pizziolo, the founder of Slow Rise Pizza Co. and a 30 plus year restaurant veteran.
